The Roma II matures a bit slower than other varieties and the flat, delicious pods are worth the wait! The bean’s texture is firm and holds up well in cooking and stir-frying. This bean is considered to be gourmet. This is an Italian-type bush bean. The pods are five to six inches long, fleshy, tender and dark green. The pods reset after being harvested and make for a longer more productive yield.
