Slow to bolt and full of antioxidants, the Morris Heading Collard produces large bluish-green leaves with off white veins. Collards most likely originated in Asia and the Mediterranean region and made its way through Europe to become an important part of cuisine in the American South due to the slave trade. Slaves would use this relatively inexpensive leaf to boil with scraps of whatever meat was available. This vegetable has become a staple of southern cooking.
