Some varieties are cultivated specifically for the flavorful tendrils or pea shoots, which are pricey in Chinese markets and are considered a delicacy. Pea shoots are delicious raw with a little citrus juice, lightly steamed or stir-fried, or cut up and added to fish or chicken dishes.
