Beets prefer cooler temperatures and should be planted in the spring and late summer. Beets perform well in poor soil. Consider soaking seeds for a day before planting for better germination rates. Plant seeds half an inch deep and space two to four inches apart. Plant in a fully sun expose area. Fifty to sixty days until mature. The root will be two to three inches in diameter come harvest time.
