Keep covered for 3 to 4 more days before exposing light. Water daily so the soil is moist but not soggy. Harvest at desired length. Young pea shoot-tips and leaves have a delicious pea flavor. Fresh pea shoots are great as garnish to sandwiches, tacos and to any salad. Excellent in stir-fry with garlic in dishes such as Chinese dau miao.
