mashed sweet potatoes

Ingredients

  • 3-4 Medium Sweet Potatoes (white or orange flesh)
  • 1/2 Cup Sour Cream
  • 1/2 Stick Butter
  • Thyme

Instructions

1. Skin and cube the sweet potatoes. Boil until fork tender (about 15-20 Minutes). Drain.

2. Add cooked potatoes to a stationary mixer or use a hand masher. Slice 1/2 stick of butter and add to the potatoes. Add 1/2 cup sour cream. Mix until smooth. Taste test your potatoes. If you would like a sweeter taste add up to 1/4 cup brown sugar. White flesh sweet potatoes tend to be very sweet and do not require this additional sugar.

3. Mix in freshly chopped thyme as desired. Serve!
